Every spring, I get super excited about making a batch of homemade limoncello to stash in my freezer. It’s the perfect way to beat the summer heat! This year, I decided to go big or go home, crafting a larger batch than ever before. The result? A fabulous frosty summer blended drink that’s like creamsicle’s fun-loving cousin! If you’re feeling adventurous, feel free to dial back the limoncello a notch, but let’s be honest—I love my drinks with a little extra kick! The zesty burst of fresh lemon juice cranks up the lemony goodness in the limoncello, ensuring this creamy milkshake will have you craving it all summer long. So grab your blender, and let’s make this summer one to remember with a refreshing twist that’s sure to put a smile on your face! 🍋🥤

2 cups vanilla bean ice cream (such as Haagen Dazs)

1/2 cup limoncello

1 tablespoon fresh squeezed lemon juice

  1. Combine all ingredients in a blender and mix on high-speed until creamy, about 1 minute.

  2. Garnish with a lemon slice and whipped cream, if desired.
