Cranberry Brie Bites

Makes 24 (Serves 12)
Nonstick cooking spray
1 (14-ounce) package puff pastry, thawed
½ cup whole cranberry sauce, stirred until smooth
½ wheel (4-ounces) brie, cut into ½-inch pieces
1 tablespoon fresh thyme leaves
Flaky sea salt and freshly ground black pepper
Preheat the oven to 425-degrees and spray a 24-cavity mini cupcake pan with nonstick cooking spray.
On a lightly floured surface, roll the puff pastry into a 14- x 10-inch rectangle.
Using a sharp knife or a pastry wheel, cut the dough into 2-inch squares. You should get 24 squares.
Press the puff pastry into the cavities of the prepared cupcake pan.
Place a teaspoon of the cranberry sauce into the center of each and top with a piece of brie.
Bake until puffed and deep golden brown around the edges, about 12 minutes.
Carefully remove from the pan, transfer to a serving platter, garnish with the thyme leaves and season with flaky sea salt and freshly ground black pepper; serve immediately.
